Grain Salad
1/2 cup cooked combined grains (quinoa, mung beans, chick peas, brown rice, etc)
1 cup arugula
a few parsley and mint leaves
1 cup diced watermelon
1 diced tomato
1/6 cucumber
a few toasted pecans
Vinaigrette:
1 T lemon juice
3 T olive oil
fennel seeds (toasted and crushed)
salt and pepper
